Quinoa + Garbanzo Beans + Farm Fresh Duck Eggs + Spices = Happy Kids and Mom!
“I want more of everything” said my daughters when they asked for a second helping of the quick and easy quinoa salad, I made for our lunch today!
This recipe is one of my go-to when I want to make something in less than 30 minutes.
The recipe is very simple – 4 main ingredients: Quinoa + Garbanzo beans + Eggs + Tomatoes + Flavoring: Salt/Pepper/Cayenne Pepper/Ponzu Sauce to one’s taste.
I cook 2 cups of Quinoa in a pot. When Quinoa is cooked and steaming hot, mix in 1 can of Garbanzo beans and 3 table spoons of water in the same pot. Put the lid on the pot and keep a low heat on for about 5 mins to steam the beans and quinoa. Serve Quinoa and beans with cut-up tomatoes and poached eggs on top. Sprinkle with salt, pepper, turmeric, paprika, Ponzu sauce to your taste. We sometimes add more ingredients like avocado slices, smoked salmon, fresh greens like arugula and sauteed veggies like zucchini to make it a more colorful and hearty bowl. You can also substitute Quinoa with rice, Garbanzo with other types of beans.
